My baby sister recently moved into her first apartment! As an experienced apartment dweller, I checked out every single option, roommate, lease and reviewed for all of the potentially unexpected issues that come with renting. It was actually a fun process when it wasn’t me trying to find a spot for myself! While she was searching, she lived with me and the fiance for a little over a month to make her commute to work a little easier. We haven’t lived in the same place since I left for college and at that time, she was still in elementary school! Getting to know your siblings as adults is really an incredible thing. I’ll always cherish the time we had together!
A few weeks ago, we stopped by her new apartment to move a few things into it and she’s got an incredible bodega at the entrance of her building. I love a good bodega. If you live in any sort of city, you know the value of such a small and often underrated grocery and specialty store. When it’s snowing out and you can’t walk to the grocery store, you hit up the bodega for all of the essentials. Need some authentic naan bread from a local bakery? Bodega. Looking for some nontraditional spices that you can’t find at any grocery store? Bodega. Need toilet paper, cleaning supplies, El Pato, coconut milk and a bottle of tequila. BODEGA. The bodega below her building also has a taquería in it and I’m slightly upset, albeit relieved, that I’m not living there myself.
We stopped by the bodega before running home for a few odds and ends and I found these gorgeous, plump tomatillos. They were honestly the biggest ones I have ever seen and were perfectly fresh despite the cramped aisle I found them in. My mind immediately knew what I had to add to the menu for dinner. FIRE ROASTED TOMATILLO SALSA. It took 5 minutes and is the perfect thing to bring to your next potluck or football watch party. Slather it on some chicken, use as a salad dressing or chomp away with some tortilla chips. Endless options, amazing flavor.
Fire Roasted Tomatillo Salsa
Ingredients
- 1/2 white onion
- 4 large tomatillos
- 1 large jalapeño
- 4 cloves of garlic
- Small handful of cilantro
- Pinch of sea salt
Directions
- Roast the tomatillo and jalapeño over a flame and combine all ingredients in your blender. Pulse until chopped and combined. That’s it!
